Grilled Asparagus

Ingredients

  • 8 garlic cloves
  • 1.5 kg green asparagus
  • Salt
  • 0.5 basil
  • 0.5 thyme
  • 2 tbsp lemon juice
  • 50 ml olive oil
  • Pepper (freshly ground)
  • parmesan shavings (for garnish)

Instructions

    Peel the garlic cloves. Wash the asparagus, trim the tough stems and peel the lower third. Bring a large pot of salted water to a boil. Blanch the asparagus with the garlic for about 5 minutes, then shock in cold water.

    Preheat the grill.

    Rinse the basil and roughly chop it. Set aside some thyme stems for garnish, pluck leaves from the rest.

    Whisk together lemon juice, olive oil, basil, thyme, salt, and pepper.

    Place the asparagus and garlic, preferably in a foil tray, on the grill for about 8 minutes, turning occasionally, brushing with herb oil several times.

    Arrange on plates for serving, drizzle with remaining oil, and top with Parmesan shavings.
