Ingredients
- 300 g dried white beans
- 1 bay leaf
- 1 onion
- 1 Garlic clove
- 250 g endive salad
- 100 g smoked chicken breast fillet
- 2 tbsp olive oil
- 800 ml poultry broth
- Salt
- ground pepper

Soak the beans overnight covered with water.

Drain and then cover again with water, add the bay leaf, bring to a boil and simmer for about 45 minutes.

Peel the onion and garlic; dice the onion and finely chop the garlic. Wash and trim the endive salad, cut into pieces. Slice the chicken breast into fine strips. Sauté together with onion and garlic in hot oil for 1-2 minutes. Add broth and bring to a boil. Add the endive salad and let simmer gently for about 5 minutes. Drain the beans, add them to the soup, season with salt and pepper, and serve.
