Green vegetable salad with fresh yogurt mint cream cheese dressing

Ingredients

  • 2 Zucchini
  • 300 g broccoli florets
  • 200 g cauliflower florets
  • 300 g Sugar snap peas
  • 200 g thick beans
  • Salt
  • 2 sachets of watercress
  • 200 g natural yogurt
  • 100 g cream cheese (pure)
  • 1 tbsp Lemon Juice
  • 3 tbsp whipping cream
  • 2 tbsp freshly chopped mint
  • Pepper (from the grinder)

Instructions

    Wash and trim the vegetables. Slice the zucchini diagonally into rounds and halve the broccoli and cauliflower florets. Blanch the vegetables in boiling salted water: broccoli, cauliflower and thick beans for 6-8 minutes, snap peas for 2-3 minutes. Drain, shock in cold water and let drain well.

    Sauté the zucchini briefly on both sides in a hot pan with 1 tbsp oil, then remove and drain on kitchen paper.

    Trim the watercress with scissors.

    Whisk together the yogurt, cream cheese, lemon juice, whipping cream and mint for the dressing; season with salt and pepper.

    Combine the vegetables with the watercress, serve in bowls topped with the dressing.
