- 1 Red Onion
- 500 g mixed leaf lettuce
- 200 g brown mushrooms
- 200 g white mushrooms
- 250 g salami with cheese rim (thin slices)
- 100 g freshly grated cheese (e.g., Emmental)
- 2 tbsp white wine vinegar
- Salt
- pepper (from grinder)
- 0.5 tsp Sugar
- 0.5 tsp medium-hot mustard
- 4 tbsp rapeseed oil
- 1 tsp butter
- 4 tbsp green pitted olives

Peel the red onion and slice into fine rings or strips. Wash, dry, and tear the leaf lettuce into bite-sized pieces. Clean the mushrooms; halve or quarter the white ones depending on size and mix with the salad. Whisk vinegar, salt, pepper, sugar, mustard, and oil to make a dressing, toss the salad with it, and arrange on plates. Slice the brown mushrooms and quickly fry in melted butter over high heat until golden brown.

Distribute the fried mushrooms and olives over the salad, lay the salami slices on top, sprinkle with cheese, and add the onion rings. Serve with farmer’s bread or white bread if desired.
