Green Vegetable Curry with Oatmeal

A green vegetable curry with hearty oatmeal from Spoonsparrow delivers plenty of aroma and vital nutrients.

Ingredients

  • 50 g hearty oats
  • 450 ml vegetable broth
  • 3 Carrots
  • 300 g Parsnips
  • 1 sweet potato (300 g)
  • 2 tbsp Coconut oil
  • 3 tbsp green curry paste (45 g)
  • 20 g shredded coconut (3 tbsp)
  • 250 ml coconut milk
  • 200 g broccolini (or broccoli florets)
  • 100 g peas (fresh or frozen)
  • salt to taste
  • 1 Lime

Instructions

    Soak oats in 200 ml broth for 15–20 minutes. Meanwhile peel, wash and cut carrots into slices, parsnips and sweet potato into cubes. Sauté vegetables in hot coconut oil for about 3 minutes over medium heat until golden brown. Stir in curry paste and cook for 1–2 more minutes.

    Blend soaked oats until creamy. Mix shredded coconut with coconut milk.

    Add the oat mixture to the pan with vegetables, stir, then pour in remaining broth. Cover and simmer on low heat for about 15 minutes, stirring occasionally.

    Meanwhile trim and cut broccolini as needed. Add it with peas to the curry and cook for another 5 minutes; season with salt. Slice lime into wedges. Serve green vegetable curry with oatmeal topped with lime wedges.
