  • 500 g Green Asparagus
  • 500 g green beans
  • Salt
  • 2 handful coriander leaves
  • 1 handful Arugula
  • 2 stalks tarragon
  • 50 g almond kernels
  • 1 tsp coarse mustard
  • 4 tbsp tarragon vinegar
  • 1 tbsp Lemon Juice
  • 1 tsp Honey
  • 2 tbsp pumpkin seed oil (cold‑pressed)
  • 3 tbsp Rapeseed oil

    Whisk mustard with vinegar, lemon juice, 1–2 tbsp water, honey, and both oils; season with salt and pepper. Gently fold the herbs, arugula, and vegetables into the dressing and plate. Sprinkle with almonds and serve immediately.
