Ingredients
- 1 kg green tomatoes (e.g., Evergreen or Lime Green)
- 1 Organic Orange
- 1 tsp cinnamon
- 20 ml rum (optional)
- 300 g 3:1 gelatin sugar
Instructions

Wash the tomatoes, cut off the stem ends and chop into pieces. Rinse the orange hot, pat dry and thinly slice the peel. Squeeze out the juice. Mix both with cinnamon, rum and sugar, add to the tomatoes, and let steep for about 15 minutes.

Meanwhile, boil jars and lids in a large pot of hot water for about 10 minutes. Remove the jars from the water and turn them upside down on clean kitchen towels to cool.

Bring the tomato mixture to a boil. Stir and simmer for about 4 minutes until bubbling (perform a gelatin test). Remove the orange peel again, fill the prepared jars, seal tightly, and let cool.
