Ingredients
- 1 Vanilla bean
- 400 ml milk
- 200 ml whipping cream
- 3 drops green food coloring
- 2 tea bags green tea
- 4 egg yolks
- 100 g sugar
Instructions

Split the vanilla bean lengthwise, then bring the milk, cream and food coloring to a boil in a pot. Add the tea bags and steep for about 10 minutes. Remove the tea bags and vanilla bean. Whisk the egg yolks with the sugar until pale and creamy.

Slowly pour the vanilla-infused milk into the whisked eggs while stirring, then strain back into the pot. Cook over low heat, stirring constantly with a wooden spatula until the mixture thickens (but do not let it boil).

Cool the custard over a cold water bath. Transfer to a shallow dish and freeze for at least 5 hours, stirring every half hour to prevent large ice crystals.
