Ingredients

  • 150 g grated Parmesan
  • 1 small frisée lettuce
  • 75 g arugula
  • 1 lemon (juice)
  • 1 tsp Honey
  • 5 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 400 g roasted beef

    Preheat the oven to 200°C on top heat. Place small parmesan balls on a baking sheet lined with parchment paper and bake in the oven until golden brown, portion by portion. Remove immediately from the tray, shape as desired, and let cool.

    Wash, trim, and tear the salads into small pieces. For the dressing, whisk lemon juice with honey and olive oil, then season with salt and pepper. Toss with the leafy greens and divide among bowls. Slice the roast beef and arrange it on top of the salad together with the parmesan chips.
