Ingredients
- 200 g leafy greens (e.g., romaine lettuce, oakleaf lettuce)
- 1 lemon (juice)
- 1 small clove of garlic
- 6 tbsp extra‑virgin olive oil
- 0.5 tsp medium‑hot mustard
- Salt
- freshly ground pepper

Wash and dry the salad leaves, then cut into bite‑size pieces.

Squeeze the lemon for juice. Peel the garlic and press it through a garlic press. Whisk the olive oil with the mustard, fold in the lemon juice and pressed garlic, and season with salt and pepper.
