Green Salad with Beef

Ingredients
- 1 tbsp light soy sauce
- 3 tbsp white wine vinegar
- 2 tbsp oil
- 2 shallots
- 1 tsp garlic-onion granulate (crumbled)
- Pepper
- 1 small head lettuce
- 100 g arugula or escarole (as desired)
- 500 g beef fillet
- 2 tbsp sesame oil
- 4 cloves garlic
- 1 Tbsp clarified butter
Instructions

Peel the shallots and slice them into thin rings. Mix all dressing ingredients in a bowl and fold in the onions.

Slice the meat into thin strips, then cut into bite-sized pieces. Lightly pepper.

Peel the garlic and slice it thinly, then roughly chop it. Fry in clarified butter around the wok until crispy. Remove from wok and drain on kitchen paper.

Heat oil in the wok and quickly sear the meat all over. Take out of the wok, wrap in foil, and let it rest at 80°C in the oven.

Meanwhile wash, clean, dry the salad, then toss with dressing in a bowl. Remove the meat from the oven. Plate the salad on dishes or bowls, add the meat, sprinkle with garlic, and serve.
