Green Power Salad

Ingredients

  • 2 Kohlrabi (with tender leaves)
  • 1 Broccoli
  • 5 tbsp olive oil
  • 30 g pumpkin seeds (2 tbsp)
  • Salt
  • Pepper
  • 1 sprig thyme
  • 1 lemon (juice)
  • 1 tsp coarse mustard
  • 1 tsp Honey
  • 15 g Capers (1 tbsp; jar)

Instructions

    Clean, wash, peel and shave Kohlrabi into thin slices. Wash Kohlrabi leaves, remove thick leaf tips and cut leaves into strips. Clean, wash Broccoli, trim stem, peel and shave into thin slices, divide remaining broccoli into small florets.

    Heat 1 tbsp oil in a pan. Sauté broccoli florets and stem at medium heat for about 5 minutes. Add pumpkin seeds and Kohlrabi leaves and sauté for another 3 minutes. Season with salt and pepper. Remove from pan and mix with Kohlrabi slices.

    For the dressing, wash thyme, pat dry and remove leaflets. Combine remaining olive oil with lemon juice, mustard, honey, thyme, salt and pepper. Add capers and stir. Toss dressing with salad ingredients.
