Ingredients
- 300 g basmati rice (cooked)
- 2 avocados (ripe)
- 1 Garlic clove
- 5 tomatoes
- 0.5 yellow bell pepper
- 1 small red radish
- a handful of herbs (basil leaves, thyme leaves…)
- Salt
- Pepper (freshly ground)
- red pepper flakes
- 1 organic lemon (juice)
- olive oil (cold-pressed)
- plain yogurt
Instructions

Peel the avocados, halve them, remove the pits and dice into small cubes. Peel the radish and dice it. Wash the tomatoes, halve them, deseed and dice into small cubes. Core the bell pepper and dice it. Mix the rice with the radish, tomatoes and bell pepper.

Whisk about 150 g yogurt with 2 tbsp oil and 2 tbsp lemon juice, salt and pepper; press in the peeled garlic clove, stir well and fold into the rice mixture. Gently fold in the avocado cubes and roughly chopped herbs. Drizzle with plain yogurt, sprinkle with red pepper flakes and serve immediately.
