Ingredients
- 400 g small, firm potatoes
- 1 Carrot
- 2 Garlic cloves
- 1 white onion
- 2 tbsp olive oil
- 750 ml vegetable broth
- Salt
- 100 g fresh peeled cabbage bean
- 100 g soup noodles
- 100 g peas (fresh or frozen)
- sage leaf (for garnish)
- black pepper (ground)
- basil (for serving)
Instructions

Peel, wash, and slice the potatoes. Peel and dice the carrot.

Peel and finely chop the garlic and onion. Sauté both briefly in hot oil. Add the broth, potatoes, salt, and simmer for about 10 minutes over low heat.

Add the carrots, cabbage beans, noodles, and peas, and cook everything together for another 8 minutes. Add more broth if needed.

Stir in the sage leaf and season the Minestrone to taste. Serve in deep bowls and garnish with basil.
