Ingredients
- 600 g green bean (Prinzessbohne)
- Salt
- 1 tsp dried bean herb
- 1 starfruit
- 2 red onions
- 4 tbsp olive oil
- 1 tsp mustard seeds (coarsely crushed)
- black pepper (freshly ground)
- 4 tbsp white balsamic vinegar
Instructions

Clean the beans, trim ends and remove any strings if necessary. Bring a large pot of salted water to a boil. Add bean herb. Boil beans for about 8 minutes, then drain and shock in cold water to blanch.

Wash the starfruit and slice into rounds. Peel the onions, halve them, and thinly slice. Heat oil in a pan, sauté onions briefly, add mustard seeds and beans, stir warm, season with pepper and vinegar, taste.

Transfer green beans with onions to a bowl. Serve garnished with starfruit slices.
