Green Beans in Chinese Style

Ingredients

  • 1 kg green beans
  • 100 g canned red beans
  • 2 Garlic cloves
  • 2 chili peppers
  • 2 Spring Onions
  • 1 tsp freshly grated ginger
  • peanut oil (for frying)
  • 2 tbsp rice wine
  • 2 tbsp fish sauce
  • soy sauce

Instructions

    Wash, trim and leave the beans whole or halve them depending on size. Rinse the canned red beans and drain well. Peel and finely chop the garlic cloves. Wash, halve, seed and finely chop the chili peppers. Wash, trim and finely chop the spring onions.

    Fry the green beans in hot peanut oil for about 4 minutes until they slightly curl. Remove from the oil and drain well.

    Sauté the garlic with the chili, spring onions and ginger in 1 tbsp of hot oil, add the red beans, deglaze with 2-3 tbsp water and rice wine, then stir in fish sauce and simmer for 1-2 minutes. Finally add the green beans and season with soy sauce.
