Ingredients

  • 4 blood oranges
  • 600 g watermelon flesh
  • 1 stalk Celery
  • 2 stems tarragon
  • 2 tbsp sherry vinegar
  • 2 tbsp Maple syrup
  • 2 tbsp grape seed oil
  • Salt
  • black pepper (freshly ground)

    Peel the oranges all around with a sharp knife and separate the segments from the membranes. Squeeze the juice from the remaining flesh and collect it. Seed the watermelon flesh as desired and cut into bite‑size pieces. Wash, trim and finely slice the celery. Rinse the tarragon, shake dry and chop the leaves.

    Whisk the orange juice with sherry vinegar, maple syrup, grape seed oil, salt and pepper to make a dressing. Toss the oranges, watermelon and celery with the dressing, season the salad, let it rest for about 30 minutes, taste again and fold in the tarragon.
