Green Bean Salad with Mozzarella, Tomatoes, Pine Nuts and Raisins

Ingredients

  • 400 g Green Beans
  • 1 onion
  • 300 g cocktail tomatoes
  • 1 head Lollo bionda lettuce
  • 300 g mini mozzarella balls
  • 3 tbsp white wine vinegar
  • 6 tbsp vegetable oil
  • 1 tsp Honey
  • Salt
  • pepper (ground)
  • 80 g pine nuts
  • 2 tbsp raisins

Instructions

    Clean, trim and blanch the beans in boiling salted water for 6-8 minutes; cool under cold running water and drain well. Peel and finely dice the onion. Wash and quarter the tomatoes. Rinse, dry and tear the lettuce into bite‑sized pieces. Drain the mozzarella.

    Arrange all ingredients on plates. Whisk vinegar, oil, honey, salt and pepper to make a dressing; mix with onions, taste, then drizzle over the salad. Toast pine nuts in a dry pan until fragrant, sprinkle raisins on top, and serve.
