Ingredients

  • 300 g boiled potatoes
  • 1 apple (e.g., Boskop)
  • 200 g boiled beetroot
  • 100 g mustard cucumber
  • 6 herring fillets
  • 150 g mayonnaise
  • 50 g yogurt
  • Salt
  • black pepper (freshly ground)
  • 1 onion

Instructions

    Peel the potatoes, apple and beetroot and cut them into cubes.

    Cut the mustard cucumbers and herring fillets into cubes as well.

  3. 3.

    Whisk together the mayonnaise and yogurt, season heavily with salt and pepper. Dice the onion finely and fold it in. Mix all other ingredients thoroughly.

    Before serving let the salad rest covered for about 1 hour.

    Serve with hearty whole-grain bread.
