Ingredients

  • 400 g Green Beans
  • Salt
  • 250 g broccolini
  • 1 Garlic clove
  • 100 g mixed leafy greens (e.g., Lollo Rosso and Biondo, young spinach, frisée)
  • 4 tbsp olive oil
  • 50 ml Vegetable broth
  • 4 tbsp white balsamic vinegar
  • 0.5 untreated lemon (zest and juice)
  • 1 pinch sugar
  • 1 tsp freshly chopped bean herb

Instructions

    Wash, trim, and cook the beans in salted water for about 6 minutes until firm. Shock in ice water and drain. Wash and halve the broccolini lengthwise. Peel and finely chop the garlic clove. Wash, trim, and tear the leafy greens into bite-sized pieces.

    Sauté the broccolini with the garlic in hot oil for 2-3 minutes. Deglaze with broth, remove from heat, and let simmer for 3-4 minutes until tender. Mix with the beans and combine with balsamic vinegar, lemon juice and zest, sugar, leafy greens, and bean herb. Season with salt and serve.
