String Bean and Potato Medley

The string bean and potato medley from Spoonsparrow is perfect as a dinner in a single household!

Ingredients

  • 800 g string beans
  • Sea salt
  • 2 stalks bean sprouts
  • 200 g potatoes
  • 30 g raw beef ham
  • 1 tbsp Cornstarch
  • 500 ml vegetable broth

Instructions

    Cut the washed, trimmed string beans into small pieces and cook them in lightly salted water over medium heat. Season with bean sprouts. Meanwhile wash, peel, cut the potatoes into small pieces, lightly salt and cook in a little water.

    After 15 to 18 minutes add half of the cooked beans to the potatoes. Cool the remaining beans and set aside as a side dish. Dice the ham finely and stir it into the bean mixture. To thicken, whisk the cornstarch with some cold water. Add the vegetable broth, stir in the starch mixture and bring back to a boil until the liquid thickens.
