Greek Stuffed Bell Peppers with Sheep Cheese

Ingredients

  • 4 yellow bell peppers
  • 4 tomatoes
  • 1 Green Chili Pepper
  • 250 g sheep cheese
  • 100 g black olives (pitted)
  • 1 bunch Oregano
  • 200 g long-grain rice
  • oil (for greasing the dish)
  • salt and pepper

Instructions

    Halve bell peppers lengthwise, remove seeds and membranes, wash and pat dry. Crumble sheep cheese; blanch tomatoes in hot water, cool, peel, quarter, deseed, dice. Wash chili, halve, remove seeds, finely chop.

    Chop olives and mix all with oregano leaves, salt, and pepper. Fill pepper halves, place in a greased oven-safe dish, cover with foil, bake at 200°C for 35 minutes. Prepare rice according to package instructions. Serve stuffed peppers with sheep cheese alongside the rice.
