Greek Skewers
Greek Skewers from Spoonsparrow bring summer to the plate!
Ingredients
- 2 tsp garlic powder
- 1 tsp Dried oregano
- 1 tsp dried thyme
- 1 tsp ground cumin
- 1 tsp ground coriander
- 500 g pork neck (boneless)
- 3 tbsp olive oil
- 0.5 cucumber
- 250 g Cherry Tomatoes
- 80 g pitted black olives
- 160 g feta cheese (45% fat in total)
- 2 Organic lemons
- Salt
- Pepper

Mix garlic, oregano, thyme, cumin, and coriander in a bowl. Rinse the pork under cold water, pat dry, and cut into equal bite-sized cubes. Combine with the spice mix and olive oil in the bowl, cover, and marinate at room temperature for about 1 hour.

Meanwhile, peel, wash, and cube the cucumber. Wash the tomatoes. Halve the olives. Crumble the cheese. Rinse the lemons under hot water, pat dry, and cut into wedges.

Thread the pork onto skewers and grill on a preheated grill for a total of about 10 minutes, turning occasionally. Season with salt and pepper after each turn. Add the tomatoes to grill for an additional 4–5 minutes until slightly softened. Then combine the grilled pork, cucumber, olives, and tomatoes on small plates. Season the salad with salt and pepper, sprinkle with feta, drizzle a little lemon juice over it. Place the Greek skewers on large plates, garnish with lemon wedges, and serve with the salad.
