Greek Salad with Sheep Cheese and Avocado

Ingredients

  • 1 bunch Basil
  • 2 small onions
  • 4 large beef tomatoes
  • 20 black olives (pitted)
  • 160 g feta cheese
  • 2 ripe avocados
  • Pepper
  • Sea salt
  • 2 tbsp balsamic vinegar
  • 2 tsp Olive oil

Instructions

    Wash basil leaves and cut into thin strips. Set aside some for garnish.

    Peel the onions and finely chop them. Wash the tomatoes, remove stems, and dice them small. Slice the olives. Crumble the sheep cheese.

    Halve the avocados lengthwise, remove the pits. Scoop out a bit of flesh with a spoon and crumble it. Mix the avocado, tomato and onion cubes, olives, sheep cheese and basil together.

    Season with pepper, salt, vinegar and oil. Garnish with basil leaves.
