Gratinated Veal with Zucchini, Tomatoes and Cheese

- 1 Zucchini
- 500 g veal fillet
- 250 g mozzarella
- 2 ripe tomatoes
- 30 g basil
- 4 tbsp olive oil
- 2 tbsp freshly grated Parmesan
- Sea salt
- Cayenne pepper

Wash, trim, halve the zucchini lengthwise and cut diagonally into slices. Wash the veal fillet, pat dry and slice into four equal pieces; lightly flatten each piece.

Drain the mozzarella well and slice it. Wash the tomatoes, remove the stem ends and slice them as well. Blend basil (save a few leaves for garnish) with 5 tbsp olive oil and mix in the parmesan. Preheat the oven to 200°C fan‑forced. Arrange the zucchini slices on the bottom of a baking dish and drizzle with 1 tbsp olive oil. Season with salt and pepper. Season the veal similarly, place it atop the zucchini, then layer tomato slices and mozzarella. Sprinkle a little cayenne pepper over everything and bake in the preheated oven for 20–25 minutes until bubbling. Garnish with remaining basil leaves and drizzle basil pesto on top.
