Gratinated Oysters

Do you like mussels? How about this delicious and simple Spoonsparrow recipe for gratinated oysters.

Ingredients

  • 16 oysters
  • 1 stalk Parsley
  • 2 stalks thyme
  • 1 stalk mint
  • 80 g breadcrumbs
  • 0.5 tsp lemon zest
  • 100 g butter
  • Salt
  • Pepper (freshly ground)
  • Sea salt
  • Lemon slices (for garnish)

Instructions

    Preheat the oven grill. Open the oysters, remove the mussel meat from the shells and place it back into each shell half. Wash the herbs, shake dry, pluck leaves or needles, finely chop and mix with breadcrumbs and lemon zest.

    Combine with melted butter and season with salt and pepper. If the mixture is too dry, add more butter; if still dry, stir in a little more melted butter.

    Place the oysters on a bed of sea salt (preferably in a baking dish or fireproof bowl) and cover with the breadcrumb mixture. Grill under the preheated grill for 3-4 minutes until golden brown. Serve the gratinated oysters on a platter with lemon slices if desired.
