Classic Baked Oysters

Ingredients

  • 36 oysters (very fresh)
  • 100 g finely grated white bread
  • 100 g chopped herbs (parsley, tarragon, chervil)
  • 4 garlic cloves (finely chopped)
  • 100 ml olive oil
  • Pepper (freshly ground)
  • 2 tbsp lemon juice
  • coarse Sea salt

Instructions

    Preheat the oven to 230°C. Wash and open oysters. Hold each oyster with the convex side down in a kitchen towel, insert an oyster knife at the hinge, twist to pry open, cut off the upper muscle attachment from the shell, remove the top shell, then cut the lower muscle attachment from the shell; collect the oyster liquid and release oysters from shells.

    Strain the oyster liquid through a fine sieve and set aside. Clean and dry the deep oyster shells. Mix olive oil, oyster liquid, and lemon juice; season with pepper.

    Return oysters to shells, sprinkle chopped herbs and garlic over them, dust finely grated white bread on top, then drizzle the sauce over everything.

    Sprinkle a thick layer of sea salt on a baking sheet and place the oysters on it.

    Bake in the preheated oven for about 5 minutes until golden yellow.
