Ingredients

  • 12 oysters
  • 2 cloves garlic, finely chopped
  • 2 tbsp olive oil
  • pepper, freshly ground
  • Lemon juice
  • 4 tbsp diced tomatoes
  • 12 slices baguette
  • lemon zest, for garnish

Instructions

    Wash and open the oysters. Hold each oyster with the convex side down in a kitchen towel, use an oyster knife to pierce the hinge at the back, twist to open, then cut off the upper muscle attachment from the shell, remove the top shell, and finally cut off the lower muscle attachment.

    Release the oysters from the shells by pulling them away with the muscle attachments, letting them drip on paper towels.

    Toast or roast the baguette slices in a hot oven until golden.

    Heat olive oil in a pan over medium heat and simmer the oysters for about 1–2 minutes more than you would fry. Drizzle with lemon juice and season with pepper. Remove from heat, place one oyster on each toasted baguette slice, top with diced tomatoes, and garnish with a piece of lemon zest before serving.
