Gratinated Kohlrabi

Ingredients

  • 4 equal-sized kohlrabi
  • 500 ml vegetable broth (instant)
  • 1 bunch basil (large)
  • 120 g cheddar cheese (sliced)
  • 1 Garlic clove
  • 1 onion
  • 20 g butter
  • 2 tbsp flour
  • 150 ml white wine
  • 200 ml heavy cream
  • Salt
  • ground pepper

Instructions

    Clean, peel, and halve the kohlrabi. Place halves on their cut sides and make several deep cuts 1 cm apart on the round side. Bring broth to a boil in a wide pot. Add kohlrabi with cut side down, cover, and simmer over medium heat for 20-30 minutes.

    Lift kohlrabi from broth with a slotted spoon. Rinse basil and pluck leaves. Insert basil leaves deep into the cuts of the kohlrabi as much as possible. Set aside remaining basil. Place kohlrabi cut side down in a greased baking dish. Top with cheddar cheese. Bake in a preheated oven at 180°C (Gas: Level 2-3, fan not recommended) for about 20 minutes.

    Meanwhile, peel garlic and finely dice onion. Heat butter. Sauté onion until translucent. Add garlic. Sprinkle flour over and sauté briefly. Pour in wine, then 200 ml vegetable broth and cream; stir to combine. Bring to a boil while stirring. Reduce heat and simmer for a few minutes. Finely chop remaining basil and add to sauce. Season with salt and pepper. Remove kohlrabi from oven and pour sauce into the baking dish.
