Ingredients

  • Olivenöl (for the pan)
  • 1 small green bell pepper
  • 1 red pepperoni
  • 4 sardines (in salt)
  • 1 handful thyme
  • 1 handful basil
  • 3 rosemary sprigs
  • 4 tbsp grated Parmesan
  • 2 tbsp olive oil
  • Pepper (freshly ground)
  • 6 large tomatoes (e.g., Coeur de Boeuf)

Instructions

    Preheat the oven to 200°C (392°F) with upper and lower heat. Grease a baking dish with oil.

    Wash, trim, and slice the bell pepper into fine strips. Peel the pepperoni and cut it into thin rings. Rinse the sardines and finely chop them. Roughly chop thyme, basil, and rosemary and mix with the sardines and parmesan. Toss the peppers and pepperoni with olive oil and season with a little pepper. Wash the tomatoes, remove the stem ends, and halve them. Place them cut side up in the dish and spread the herb mixture over them. Bake for about 20 minutes.
