Ingredients

  • 1 kg potatoes
  • 500 g tomatoes
  • 2 Garlic cloves
  • 1 EL balsamic vinegar
  • 6 EL olive oil
  • 2 EL parsley (finely chopped)
  • 1 EL pine nuts
  • Salt
  • Pepper (freshly ground)
  • oil (for the pan)

Instructions

    Cook potatoes in their skins, drain, rinse and peel.

    Peel and chop garlic; mix with vinegar and olive oil, season with salt and pepper, stir in 1 EL parsley.

    Slice tomatoes and potatoes into rounds.

  4. 4.

    Brush a baking dish with oil, layer potatoes and tomatoes, brush with the oil mixture. Bake at 200°C for about 30 minutes.

    Toast pine nuts in a dry pan without fat.

    Serve the gratin sprinkled with remaining parsley and toasted pine nuts.
