- 1 kg eggplant tomato
- Sea salt
- fresh herbs to taste (e.g., basil, lemon balm)

Wash tomatoes, remove stem ends and optionally cut out some flesh to speed drying. Place on a baking sheet lined with parchment paper, sprinkle with salt, and bake in an oven at 110 °C fan‑forced with a wooden spoon wedged in the door for about 6–8 hours. Turn tomatoes every 30 minutes. They should be flexible, not too tough or wet by the end.
