Sushi with Salmon

Ingredients
- 125 g smoked salmon
- 1 cucumber piece
- 200 g ready sushi rice
- vinegar water (for hands)
- wasabi (to spread)
- pickled ginger (for garnish)
- chives flower (for garnish)

Line a small square mold with plastic wrap and oil it. Slice the smoked salmon into very thin slices and lay half of them on the bottom of the mold. Place half of the sushi rice on top and press down. Wash the cucumber and slice into very thin rounds.

Distribute the cucumber slices over the rice, spread a little wasabi on them, add the remaining sushi rice and press firmly. Cover with the remaining salmon and press well again. Cut the whole thing in 8 pieces with a very sharp knife, then carefully transfer to a plate and remove the plastic wrap.

Trim the sushi once more carefully and then lift each piece individually with a palette and arrange. Garnish each with pickled ginger and chives flowers.
