Gratinated Bratwurst Sandwiches
Paprika and sauerkraut add a burst of vitamin C to support the immune system in these gratinated bratwurst sandwiches.
Ingredients
- 200 g red bell pepper (1 red bell pepper)
- 2 Spring Onions
- 200 g sauerkraut
- 500 g raw fine bratwurst (2 raw fine bratwursts)
- 200 g Low-fat quark
- 600 g large tomatoes (6 large tomatoes)
- 10 square slices mixed bread
- 10 tsp medium-hot mustard
Instructions

Halve the bell pepper, remove seeds, wash and dice finely.

Wash spring onions, trim and slice into thin rings.

Drain sauerkraut and finely chop.

Press the bratwurst into a bowl. Add quark and stir until smooth, then fold in pepper, spring onions, and sauerkraut.

Wash tomatoes, cut off stem ends and slice into rounds.

Spread 1 tsp mustard on each bread slice, cut diagonally, and top with tomato slices.

Line a baking tray with parchment paper. Arrange the bread slices and spread the bratwurst mixture evenly over them. Bake in a preheated oven at 200 °C (180 °C fan or gas stove level 3) on the upper rack for about 20 minutes until the topping browns.
