Ingredients

  • 2 old-fashioned whole wheat rolls
  • 2 tbsp butter
  • 2 large onions
  • 500 ml hot water
  • 1.5 tsp vegetable broth
  • 500 ml dark beer (or alcohol-free Altbier)
  • Salt
  • pepper (from the mill)
  • nutmeg

Instructions

    Cut the rolls into small cubes and fry them in half of the butter in a pan over medium heat until crispy and brown, then set aside warm.

    Peel the onions, slice them into thin rings, and fry them in the remaining butter over medium heat until golden brown. Keep the onion rings warm as well.

    Wash the chives, pat dry, and cut into fine ribbons. Season water with the broth. Stir in the beer and heat the liquid. Season with salt, pepper, and nutmeg to taste.

    Arrange the bread cubes with the onion rings and chives in pre-warmed soup bowls. Pour the hot liquid over them and serve the soup immediately.
