Gratinated Beef Medallions with Beans in Bacon Wrap and Spaetzle

Ingredients

  • 600 g fresh green beans
  • Salt
  • 8 slices turkey bacon
  • 2 tbsp olive oil
  • 4 beef fillets (about 160 g each)
  • pepper (ground)
  • 8 slices zucchini
  • 2 tbsp grated Gruyère cheese
  • 500 g spaetzle
  • nutmeg
  • thyme (for garnish)

Instructions

    Wash the beans, trim ends and cook in plenty of salted boiling water for about 10 minutes until firm, drain, immediately shock in ice water and let drain.

    Divide the beans into 8 portions, form bundles and wrap each with a slice of bacon. Brown the bean bundles in 1 tbsp hot oil all around for about 4 minutes slowly. Keep warm in a preheated oven at 80 °C (fan: 60 °C; gas: lowest setting). Season the beef fillets with salt and pepper and sear them in 1 tbsp hot oil in a pan, 2–4 minutes per side.

    Top each medallion with two zucchini slices, sprinkle with cheese and briefly broil under the oven grill. Cook the spaetzle according to package instructions. Season with salt and nutmeg. Plate the medallions with beans in bacon wrap and spaetzle, garnish with thyme and serve.
