Ingredients
- 750 g beef tenderloin
- Salt
- Pepper (freshly ground)
- 2 tbsp olive oil
- 2 tbsp freshly chopped parsley
- 1 tbsp freshly chopped coriander leaves
- 150 g soft butter
- 4 Tbsp breadcrumbs
- 1 egg yolk
- 40 g chopped walnuts

Preheat the oven to 160°C with both fan and top heating.

Wash the meat, pat dry, season with salt and pepper, then sear in hot oil on all sides until browned. Place on a rack (with a fat pan underneath) in the oven for 30-45 minutes depending on thickness.

Mix the herbs with butter, breadcrumbs, egg yolk, and walnuts. Season with salt and pepper. Spread over the meat about 5 minutes before the end of cooking.
