Grated Potato Cakes with Apple Sauce
Grated potato cakes with apple sauce from Spoonsparrow – a classic, savory dish perfectly complemented by sweet apple sauce for a special indulgence.
Ingredients
- 6 ripe apples (e.g., Boskop)
- 2 tbsp cane sugar
- 1 tbsp Lemon Juice
- 0.5 stick cinnamon
- 2 cloves
- 6 tbsp apple juice
- 800 g starchy potatoes
- Salt
- freshly grated nutmeg
- 2 Eggs
- 4 tbsp spelt flour
- butter for frying

Wash the apples, dry them, quarter, core and cut into small cubes. Mix with cane sugar, lemon juice and spices, bring to a boil in a pot and deglaze with apple juice. Simmer over medium heat for 5–7 minutes, remove from heat, strain out the spices and let the compote cool. Then blend smoothly in a blender.

Peel, wash and grate the potatoes, place them in a kitchen towel and squeeze out excess moisture. Mix the grated potato with nutmeg, salt, eggs and spelt flour. Heat a pan with butter and drop spoonfuls of the potato mixture into it.

Press flat and fry on both sides over medium heat for about 4–5 minutes until golden brown. Remove and drain on paper towels. Arrange the potato cakes on plates and serve with apple sauce.
