Grapefruit Salad

Ingredients

  • 250 g mixed leaf lettuce (Lollo Bionda, Eichblattsalat, Rucola)
  • 2 pink grapefruits
  • 2 small onions (preferably shallots)
  • 3 tbsp raspberry vinegar
  • Salt
  • Pepper
  • 1 tsp Dijon mustard
  • 5 tbsp olive oil
  • 1 packet of watercress

Instructions

    Wash the salads, spin dry and tear into bite-sized pieces.

    Filet the grapefruits. Peel off thick skin with a knife to remove white pith as well. Then cut the fruit segments out between the membranes. Do this over a bowl to catch any juice that may be lost.

    Arrange salad and grapefruit fillets on plates.

    Peel the onions and dice finely. Whisk together grapefruit juice, vinegar, onion cubes, salt, pepper, and mustard; gradually drizzle in oil while whisking.

    Drizzle over the salad plates. Garnish all plates with watercress.
