Grapefruit‑Avocado Salad with Smoked Halibut

Ingredients
- 2 pink grapefruits
- 2 Avocados
- 100 g Arugula
- 2 limes
- 4 tbsp oil
- 2 tsp sweet mustard
- 3 tsp cognac
- Salt
- freshly ground pepper
- 150 g smoked halibut

Peel and segment the grapefruit. Cut the segments into bite‑sized pieces. Halve the avocados, remove the pits, peel the skins, and dice the flesh. Wash and dry the arugula, then slice it into thin strips.

Rinse a lime and pat it dry. Grate the zest of one lime. Squeeze the juice from both limes. Whisk together the lime juice, zest, oil, and mustard. Season with cognac, salt, and pepper.

Slice the smoked halibut into narrow, thin slices and drizzle them with some of the dressing. Roll each slice around a wooden skewer and secure it. Toss the grapefruit and avocado with the remaining dressing, then arrange on glasses alongside the arugula. Garnish with the smoked halibut skewers before serving.
