Glass Noodles with Shrimp

Asian quick and easy: Try the glass noodles with shrimp from Spoonsparrow!

Ingredients

  • 125 g glass noodles
  • 1 Spring onion
  • 100 g carrots
  • 100 g cucumber
  • 100 g red cabbage
  • 50 g snow peas
  • 125 g pre-cooked shrimp
  • 0.5 lime
  • 0.5 piece ginger (5 g)
  • 2 tbsp Soy sauce
  • 1 tsp Honey
  • 1 tsp rice vinegar
  • 1 tbsp Sesame oil
  • 30 g peanut butter
  • 1 handful fresh mint
  • 1 tbsp peanuts

Instructions

    Cover glass noodles in a pot with boiling water and let them soak for about 10 minutes until tender. Then drain in a sieve and rinse under cold water.

    Meanwhile, peel, wash, and slice carrots into fine strips. Wash cucumber and cut into thin ribbons. Remove the core from red cabbage, wash, and shred finely. Slice spring onions diagonally into rings. Clean snow peas, wash, and halve them lengthwise.

    Heat oil in a pan. Sauté shrimp over medium heat for 3 minutes, seasoning with salt and pepper.

    Wash mint leaves, shake dry, pick off the tips and roughly chop. Peel lime zest, grate dry, then squeeze juice. Peel ginger and finely grate. For the dressing, mix lime juice with ginger, peanut butter, sesame oil, rice vinegar, soy sauce, honey, and 2–3 tbsp water.

    Distribute the dressing in two sealable jars. Layer glass noodles, vegetables, and shrimp on top, sprinkle with peanuts and mint. Keep the dish tightly sealed and refrigerated until serving.
