Ingredients

  • 150 g dates
  • 50 g almond flakes
  • 30 g sunflower seeds
  • 50 g hearty rolled oats
  • 40 g puffed amaranth
  • 1 tsp cinnamon
  • 1 pinch salt
  • 150 g butter
  • 100 g raw cane sugar
  • 4 tbsp flower honey
  • pumpkin seeds (for sprinkling)
  • sunflower seeds (for sprinkling)
  • amaranth (for sprinkling)
  • vegetable oil (for the knife blade)

Instructions

    Halve the dates, remove the pit and finely chop the flesh. Add almond flakes, sunflower seeds, grain flakes, amaranth and half of the dates to a bowl. Add cinnamon and salt and mix well. Heat 60 g butter with 30 g sugar and half the honey in a pot until the sugar dissolves. Combine the hot butter-sugar-honey mixture with the date-kernel mixture. Line a small baking sheet (about 20 x 20 cm) with parchment paper, pour the mixture onto it, press down and smooth.

    Heat the remaining sugar in a small pot and melt. Add the butter and honey and mix well. Stir in the remaining chopped dates and immediately spread the mixture over the kernel-flake mixture on the baking sheet. Sprinkle with pumpkin seeds, sunflower seeds and amaranth. Chill for about 1 hour. Remove from the sheet, peel off the parchment paper and cut into triangles with a knife whose blade is oiled.
