Grandma's Strawberry Jam

- 1 kg ripe strawberries
- 1 Organic lemon
- 500 g 2:1 gelatin sugar

First sterilize jars with lids by boiling them for about 10 minutes in a large pot of hot water. Then remove the jars from the water and turn them over onto clean kitchen towels to cool.

Clean, wash, and quarter the strawberries. Rinse the lemon under hot water, pat dry, and finely grate its zest. Squeeze out the juice. Puree the strawberries with the grated lemon zest and lemon juice.

Mix the strawberry puree with the gelatin sugar, bring it to a boil in a tall pot while stirring, and continue boiling for 4 minutes, skimming off any foam. Pour the hot mixture into the prepared jars immediately and seal them right away. Store Grandma’s Strawberry Jam cool, dry, and dark.
