Grandma's Sheet Cake Lebkuchen
Spoonsparrow presents: Grandma’s sheet cake Lebkuchen. The aromatic Christmas treat awakens childhood memories!
Ingredients
- 125 g honey
- 125 g sugar
- 50 g butter
- 125 ml milk (3.5 % fat)
- 400 g flour (+ 1 tbsp for working)
- 150 g starch
- 100 g Ground Almonds
- 1 tsp cinnamon
- 0.5 tsp Cardamom
- 0.25 tsp ground cloves
- 1 pinch nutmeg
- 1 pinch anise
- 3 eggs
- 7 g baking soda
- 100 g shelled almond kernels

Add honey, sugar, butter and milk to a pot and heat over medium heat while stirring until the sugar dissolves. Let cool.

Combine flour, starch, almonds and spices in a mixing bowl and stir. Add the cooled honey mixture and 2 eggs. Dissolve baking soda with 2 tbsp water in a small dish and add. Knead everything thoroughly with a hand mixer (kneading attachment) (add a little more flour if needed) until the dough shines and no longer sticks. Cover the bowl and let rest overnight in the refrigerator.

Line a baking sheet with parchment paper. Roll out the dough on a floured surface, cut into rectangles, decorate with almonds and place on the baking sheet. Whisk an egg with 2 tbsp water and brush the Lebkuchen with it. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for about 20 minutes. Remove Grandma’s sheet cake Lebkuchen from the pan and cool on a wire rack.
