Grandma's Fruit Bread
A classic that is especially indispensable during Advent: Try Grandma's Fruit Bread from Spoonsparrow!
Ingredients
- 3 eggs
- 150 g cane sugar
- 1 packet vanilla sugar
- 0.25 tsp Salt
- 0.25 tsp ground cloves
- 0.25 tsp cardamom
- ginger
- 1 orange (including grated zest)
- 125 g flour
- 1 packet baking powder
- 50 g chopped almonds
- 100 g figs
- 100 g dates
- 100 g maraschino cherries
- 50 g finely chopped lemon zest
- 50 g finely chopped orange zest
- 75 g currants
- 75 g seedless raisins
- 100 g chopped walnuts
- flour (for dusting)
- 4 tbsp apricot jam
- 3 tbsp sugar

Whisk eggs, cane sugar, the various spices, orange zest, flour and baking powder in a bowl into a smooth batter. Fold in almonds and chopped walnuts. Dice figs and dates, then add maraschino cherries, lemon zest, orange zest, currants and raisins. Lightly dust everything with a little flour and work it into the batter.

Line a baking sheet with parchment paper. Spread the batter onto it and smooth the surface. Bake in a preheated oven on the middle rack at 180°C for about 60-70 minutes. After roughly 40 minutes of baking, cover with parchment or foil.

Remove Grandma's Fruit Bread from the oven and let it cool. Warm apricot jam and dissolve the sugar in it over low heat, simmering for 2 minutes before removing from the stove. Thinly spread this glaze over the cooled bread. Slice into small pieces and serve.
