Goulash Soup with Tomatoes and Green Beans

Ingredients

  • 600 g Beef Goulash
  • 4 onions
  • 3 tbsp oil
  • thyme
  • 1 glass meat stock
  • 200 g Green beans
  • Salt
  • 4 tomatoes
  • ground pepper

Instructions

    Cut large pieces of beef goulash into smaller chunks if desired. Peel and cut onions into wedges.

    Heat 2 tbsp oil in a large pot over high heat. Brown the beef all around. Add onions and sauté together.

    Rinse thyme, shake dry, strip leaves from stems. Add to the goulash, stir, then pour in the stock and 500 ml water. Bring to a boil, cover, and simmer for about 1 hour.

    Rinse green beans, trim ends, cut into bite‑sized pieces. Boil in salted water for 8–10 minutes. Drain.

    Wash tomatoes and quarter them. Heat remaining oil in a pan and sauté the tomatoes for 1–2 minutes.

    Add the cooked beans and tomatoes to the soup, let them warm through briefly, then season with salt and pepper to taste.
