Ingredients

  • 600 g firm boiling potatoes
  • 1 large vegetable onion
  • 1 Tbsp clarified butter
  • 2 Garlic cloves
  • 1 can peeled tomatoes (ca. 400 g)
  • 700 ml fish stock
  • 600 g cod fillet
  • 1 lemon (juiced)
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp paprika powder
  • 4 tbsp chopped parsley
  • 100 g crème fraîche

Instructions

    Peel, wash, and cut the potatoes into 1.5 cm cubes. Peel and dice the onion. Heat the clarified butter in a large pot and sauté the onion cubes until translucent. Remove the garlic cloves, press them into the onions, and cook briefly. Add the potato cubes and tomatoes, then pour in the fish stock. Cook over medium heat for about 15 minutes.

    Rinse the cod fillets cold, pat dry with kitchen paper, and cut into bite-sized pieces. Drizzle with lemon juice and season with salt and pepper. Stir in the paprika powder, parsley, and crème fraîche. Then add the fish pieces and simmer covered on low heat for another 10 minutes. Adjust seasoning with salt and pepper.
