Farmhouse Patties in Levantine Style

Ingredients
- 2 tbsp pine nuts
- 400 g waxy potatoes
- 200 g carrots
- 1 Zucchini
- 1 onion
- 1 Garlic clove
- 1 tsp freshly chopped oregano
- 2 Eggs
- 3 tbsp Flour
- 2 tbsp breadcrumbs
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- vegetable oil (for frying)

Roast the pine nuts in a hot pan without fat until golden yellow, remove, let cool and roughly chop.

Peel, wash, grate the potatoes and carrots, then drain well over a sieve. Wash and peel the zucchini, grate it together with the potatoes and carrots. Peel and finely chop the onion and garlic, then add them along with the pine nuts, oregano and eggs to the potato mixture. Knead thoroughly and gradually add flour and breadcrumbs until a firm, shapeable dough forms. Season with salt, pepper and nutmeg, then form small patties.

Fry the patties in a hot pan with oil on both sides until golden yellow, remove, drain on kitchen paper and keep warm at 80°C (top and bottom heat) in the oven. Serve on a plate.
