Ingredients

  • 2 large ripe pears
  • 4 tbsp Danish blue cheese
  • 4 tbsp walnut kernels
  • Salt
  • Pepper (freshly ground)
  • 1 slice of toast
  • 4 leaves iceberg lettuce
  • 4 leaves Lollo Rosso
  • 1 tbsp Lemon Juice
  • 4 tbsp extra virgin olive oil
  • 8 slices ciabatta (toasted as desired)

Instructions

    Preheat the oven to 200°C fan-forced. Peel the pears, cut them lengthwise and remove the core. Place the halves cut side up on a baking tray lined with parchment paper.

    Crush the blue cheese and mix with walnuts. Season with salt and pepper. Spoon 1 tbsp of the mixture into each pear half. Crumble the toast slice, sprinkle over the filling and bake in the hot oven for about 10 minutes.

    Wash and dry the iceberg lettuce and Lollo Rosso. Arrange the salad on plates, drizzle with lemon juice and olive oil, and place a warm pear on top. Serve with ciabatta bread.
