Tuna Pasta Salad

A refreshing tuna pasta salad that always gets a thumbs up from Spoonsparrow.

Ingredients

  • 500 g small whole‑wheat macaroni
  • Salt
  • 1 cucumber
  • 1 onion
  • 400 g red and yellow cocktail tomatoes
  • 280 g tuna (in own juice; 2 cans)
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • black pepper (freshly ground)

Instructions

    Cook pasta according to package instructions in plenty of boiling salted water until al dente, drain and rinse under cold water. Let cool completely.

    Wash cucumber, halve lengthwise and use a small melon baller or teaspoon to remove the watery seeds, then slice. Peel onion and dice finely. Wash tomatoes, dry and halve. Drain tuna and break into chunks. Gently combine all salad ingredients in a large bowl.
